My kids have a sweet tooth just like most children. So I’m always experimenting with different cakes and breads to pack into their lunch bags. Something sweet for them to savor but still on the healthier side. This one gets all its sweetness from ripe bananas, apple sauce and the dried fruits. Give it a try!

Banana, apricot and cherry tea bread (makes one loaf tin)

3 small bananas, mashed
1 tbsp lemon juice
1 tbsp lemon zest
1 1/3 cup (150g) whole wheat flour
1 1/3 cup (150g) spelt flour
2 tsp baking powder
2/3 cup (150g) apple sauce
3.5oz (100g) butter, melted
2 eggs
1/2 cup dried cherries, finely chopped
1/2 cup dried apricots, finely chopped

Preheat the oven to 350 degrees. In a large bowl stir together the flours, baking powder, apple sauce, bananas, lemon juice and zest. Add the melted butter and then the eggs and mix well to combine. Stir in the dried fruits and mix thoroughly. Butter and line a loaf tin with baking paper and spoon in the mixture in. Make sure the dough is spread evenly and bake for 40 to 5o minutes or until a wooden skewer inserted into the loaf comes out clean. Remove the loaf from the tin and allow to cool.
