This is a great way to use up some left over scraggly looking cheeses.

Cheese salad with grapes, celery and walnuts (serves 4)

2 cups (250g) hard cheese, diced
1 cup (150g) seedless grapes, halved or sliced depending on size
3 celery sticks, halved lengthwise and thinly sliced
3/4 cup (80g) walnuts, coarsely chopped
1 tbsp Dijon mustard
2 tbsp apple cider vinegar
3 tbsp walnut oil
sea salt and cracked black pepper

Place the cheese, grapes, celery and walnuts in a bowl. Mix the mustard, vinegar and oil until well combined and season to taste with salt and pepper. Pour the dressing over the salad, mix well and serve with crusty whole grain bread or crackers.
