This is an ideal dish to get your kids to eat more veggies without them even realizing it. The spinach is mixed in with the meat and you can replace the spinach with any other leafy greens or even grated carrots, zucchini or parsnip. For an all-in-one-pot meal: Place chopped vegetables like carrots, parsnips, butternut squash around the meat loaf, drizzle with olive oil and season with salt and pepper and you’re all set!

This meatloaf also freezes really well. I usually slice it and freeze the individual slices with a piece of freezer paper in between. This way I always have a tasty meal on stand by.

Meatloaf with spinach (serves 4 to 6)

1 lb ground turkey

1 lb ground beef

4 cups spinach leaves, chopped

1 onion, chopped

1/2 cup whole wheat bread crumbs

2 tbsp mustard

1 tbsp dried parsley

1 tbsp dried oregano

1 egg

sea salt and cracked black pepper

a pinch of freshly grated nutmeg

1 tbsp ketchup

1 tbsp brown sauce or barbecue sauce

Preheat the oven to 400 degrees. In a large bowl, mix the turkey, beef, spinach, onion, bread crumbs, mustard, parsley, oregano, and egg until well combined. Season generously with salt, pepper and nutmeg. Place the mixture in a large baking dish and form into a 12 x 5 inch loaf. Mix the ketchup and brown sauce and baste the loaf with it. Bake for 45 to 50 minutes or until cooked through.
