My kids love putting together these little fish parcels and I love getting them involved in cooking. I’ve noticed that my kids are much more willing to try new flavors and types of  food if they were part of the “production process”. So why not give it a try as well?! If your kids aren’t keen on olives and capers replace them with some Mediterranean vegetables like cherry tomatoes and zucchinis.

Mediterranean fish parcels (serves 4)

1 lb new baby potatoes, cooked
2 tbsp olive oil
4x 7oz white fish fillets, like cod or mahi mahi
2 tbsp tomato paste
finely grated zest and juice of 1 lemon
cracked black pepper
about 20 black olives
2 tbsp capers, drained and rinsed
4 sprigs fresh thyme
aluminum foil

Preheat the oven to 375 degrees. In a small bowl mix the tomato paste, lemon zest and juice and season generously with pepper. Take four large sheets of foil, about 12 inch square and brush the middle area of each sheet with olive oil. Place the fish on top, baste with the tomato lemon paste and add the cooked potatoes, olives and capers. Season with a little bit more pepper and top with the thyme sprig. Loosely wrap the fish and secure tightly to completely enclose the ingredients. Place the parcels on a baking sheet and bake for about 20 minutes or until the fish is flaky. Remove from the foil and serve with a simple green salad.
