It’s orange season! With their high concentration of Vitamin C they are a perfect ingredient for your family’s winter diet to fight off any germs and diseases. This Mediterranean inspired salad shows that oranges work really well in a savory recipe. The fennel with its subtle yet distinct flavor nicely balances the sweetness of the oranges. This salad compliments any grilled chicken or fish dish but stands just as well on its own, served with some fresh crusty bread. If your kids aren’t keen on olives just serve them on the side.

Orange and fennel salad (serves 4)

4 oranges, peeled and sliced
1 bulb fennel, very thinly sliced
2 tbsp olive oil
2 tbsp orange juice
1/3 cup black, pitted olives, halved or sliced
cracked black pepper
red pepper flakes
1 tbsp fennel fronds, chopped

Arrange the orange slices on a large plate, scatter with the fennel slices, olives and fennel fronds. Season with pepper and red pepper flakes. Mix the olive oil and orange juice and drizzle over the salad.
