Wintertime is the perfect time for oven cooked comfort food. Once assembled these dishes allow you to relax while dinner is cooking all by itself. The mix of sweet potatoes and regular potatoes gives this otherwise traditional bake a new interesting twist. Other root vegetables like parsnip, turnips and carrots will work just as well. Just make sure you preboil them for a few minutes.

Potato, sweet potato and salmon bake (serves 4)

1 lb potatoes, peeled and thinly sliced
1 lb sweet potatoes, peeled and thinly sliced
3/4 cup cream
3/4 cup milk
2 eggs
sea salt and cracked black pepper
freshly grated nutmeg
10.5oz salmon fillet, thinly sliced
1/2 cup cheddar, grated
1/2 cup freshly parsley, chopped

Preheat the oven to 400 degrees. Preboil the potatoes and sweet potatoes in a pot of boiling water for 5 minutes, drain and set aside.
Meanwhile, mix the eggs, cream and milk and stir until well combined. Season to taste with salt, pepper and nutmeg. Grease an ovenproof casserole dish. Cover the bottom of the dish with a layer of potatoes and sweet potatoes, top with a layer of salmon, sprinkle with some cheese and parsley and continue this pattern. Make sure you finish with a layer of potatoes and sweet potatoes and top with the remaining cheese and parsley. Pour over the egg milk mix and bake in the oven for 35 to 40 minutes or until cooked through and golden brown.
