We went apple picking last weekend and of course we slightly overestimated our apple consumption. So first there were apples, then applesauce and then we concocted this delicious Spiced Applesauce Cake. Enjoy!

Spiced applesauce cake

1/2 cup (113g) unsalted butter, softened
1/2 cup (100g) brown sugar
2 eggs
1 tsp vanilla essence
1 tsp cinnamon, ground
a pinch of salt
a pinch of nutmeg, grated
1 cup (135g) whole wheat flour
1 1/4 cup (150g) almonds, ground
1 tsp baking powder
2 cups (450g) applesauce
powdered sugar to serve

Preheat the oven to 350 degrees. In a large bowl cream the butter with the sugar with an electric mixer. Then add the eggs and beat until fluffy and light. Add the vanilla, cinnamon, nutmeg and salt and mix well to combine. Add the flour, almond meal, baking powder and applesauce and beat thoroughly. Place the batter in a loaf tin lined with baking paper and bake for about 40 to 50 minutes. Dust with powdered sugar to serve.
