These waffles are always a winner, whether served as a dessert, a yummy snack or as a breakfast treat. And since they really don’t have a lot of sugar you don’t have to feel guilty about havingĀ  a second one. Yes please!

Whole wheat kefir waffles (makes about 10 waffles)

1/2 cup (115g) butter, softened

1/4 cup (50g) brown sugar

1 tsp vanilla extract

a pinch of salt

4 eggs

2 1/2 cups (250g) whole wheat flour

1 tsp baking powder

1/2 to 1 cup (125 to 250ml) plain kefir, unsweetened

to serve (optional) plain Greek yogurt, mixed berries, sliced banana, honey

 

Place the butter, sugar, vanilla extract, salt and eggs in a large bowl and beat with an electric mixer until well combined. Add the flour and baking powder and mix again. Next, add the kefir little by little until the desired consistency has been reached. The batter should be fairly liquid. Heat the waffle maker and bake the waffles according to instructions to your liking. Serve with a dollop of yogurt, a serving of fresh fruit and drizzle with honey.
